CUCUMBER SANDWICHES

Ingredients:

1 large cucumber
6 green onions, (bulb and about 1 inch of green)
1 (8 ounce) pkg Cream Cheese, softened
2 Tbs. mayonnaise


To prepare:

Using blender or food processor, blend cucumber and onion (mixture should not be mushy).
Drain mixture in colander for at least 1/2 hour.
Combine this with cream cheese and mayonnaise.
Spread bread on both sides with small amount of mayonnaise (to prevent soggines).
Add cucumber mix.

To serve:

Spread on bread (cut into small sandwiches) or crackers.

Note: these can be made early in the morning and put on plate covered with plastic wrap in refrigerator, they keep well.

Tuna and cottage cheese

From the kitchen of Sue

1 small can of light tuna (or your preferred type)
3-4 tbsp cottage cheese
2 tsp fresh parsley (finely chopped)
1 tbsp green onion (finely chopped)
1 tbsp milk
1 tbsp mayonnaise
Salt and pepper to taste
Slices of bread of your choice

Combine the ingredients and cover and chill until ready to use.

Spread on slices of bread and top with a second slice.

You can add lettuce, sliced tomatoes, sliced cucumbers, or a thin slice of cheddar cheese to your sandwich before placing the second slice of bread on top of filling.

Cut and serve on a plate.

Egg mayonnaise sandwich

From the kitchen of Sue

2 hard boiled eggs, shelled and finely chopped
2-3 green olives, pits removed, finely chopped
1/2 tsp prepared mustard
1 tbsp mayonnaise
1 tbsp plain yogurt
Salt and pepper to taste
Slices of bread of your choice

Combine the ingredients and cover and chill until ready to use.

Spread on slices of bread and top with a second slice.

You can add lettuce, sliced tomatoes, sliced cucumbers, or a thin slice of cheddar cheese to your sandwich before placing the second slice of bread on top of filling.

Cut and serve on a plate.
